2 tablespoons vegetable oil
1 large onion, chopped
2 cups cubed peeled sweet potato
5 cups chicken broth
1/2 teaspoon dried thyme leaves
1 16-ounce can Great Northern beans, drained
2 cups coarsely chopped cooked Butterball® Smoked Breast of Turkey
2 cups cut fresh spinach leaves
Servings: 6 / Yield: 9 cups
Heat oil in large saucepan or Dutch oven over medium heat. Add onion and cook 5 minutes. Add sweet, potato, broth and thyme and bring to a boil. Reduce heat, cover and simmer 10 minutes or until potato is almost tender. Stir in beans and turkey; continue heating until hot, about 10 minutes. Stir in spinach just before serving.
Makes 6 (1-1/2 cup) servings.
Notes: By integrating prep time with cook time, this soup can be ready in about 30 minutes.
