Southwestern Beef Hash

Start to finish: 30 minutes


1 pound lean ground beef
1 small onion, chopped
3 cups frozen potatoes O'Brien
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup prepared salsa
Green onion and ripe olive slices, optional
Servings: 4
1. Brown ground beef and onion in large skillet over medium heat 8 to 10 minutes or until no longer pink. Pour off drippings.

2. Stir in potatoes, salt and pepper.

3. Increase heat to medium-high and cook 5 minutes, stirring occasionally.

4. Stir in salsa. Continue cooking 8 to 10 minutes or until potatoes are lightly browned, stirring occasionally.

5. Garnish with green onion and ripe olive slices, if desired.

Serving Ideas: Iceberg lettuce wedge with ranch dressing.
