Recipe Feeder
Makes 6-7 small fluffy pancakes

Ingredients:

- 1/3 cup Spelt flour (may be substituted with Whole Wheat Flour)
- 1/3 cup unsweetened light soy milk (I use Alpro soy light)
- 3 egg whites
- 1/8 tsp baking powder
- pinch of salt
- 1/2 tsp vanilla extract
- as much ground cinnamon as you want(optional)

Seperate the eggs and whip the egg whites until stiff.
In a big bowl mix the flour, baking powder, soy milk, pinch of salt, vanilla and cinnamon and give it a good mix.
Fold in your egg whites into the batter.

Heat your pan (medium heat), I use a coated non-stick pan, you won't need any oil this way.
If you use a normal pan, spray some non-stick oil spray.
Plop your batter (it's really fluffy!) into the pan and push it around until it looks round.
Wait a few seconds, then with a spatular get under the pancake (it will still look uncooked on top) and flip it, push a little with the back of the spatular and wait for the other side to cook.
Done!

There's no sugar in this recipe, so you should add some syrup on top or some banana slices or sugar, whatever you want.

The WHOLE batch, as written above yields at 196Kcal without topping.

They might not taste as great as your old fashioned thick pancakes, but hey, they have about half the calories AND are healthy, so we gotta cut some slack here.
