Turkey Breakfast Sausage with Fruit Compote

1 6-ounce package dried apricots
1 6-ounce can unsweetened pineapple juice
2 teaspoons vegetable oil
1 14-ounce package Butterball® Lean Fresh Turkey Breakfast Sausage Links
1 8 1/4-ounce can sweetened pineapple chunks, undrained
1 tablespoon honey
Dash ground nutmeg
1/2 cup seedless green grapes
Hot waffles or French Toast
Servings: 6
Combine apricots and pineapple juice in medium saucepan. Bring to a boil over medium heat. Cover, reduce heat and simmer 10 minutes. Meanwhile, heat oil in large skillet over medium heat. Add sausage links and brown about 7 minutes, turning occasionally. Add undrained pineapple, honey and nutmeg to apricots; stir together. Pour fruit mixture over sausage. Continue simmering sausage-fruit mixture 5 minutes. Stir in grapes. Serve with waffles or French toast.

Makes 5 to 6 servings, 2 cups compote.
