A fun way to use up leftover turkey.
1 tbsp. hard margarine (butter browns too fast)
1 large onion, thinly sliced
1 red pepper, seeded and cut in strips
1 green or yellow pepper, seeded and cut in strips
1 tbsp. butter or hard margarine
3 cups leftover turkey, cut in strips
Salt, sprinkle
Pepper, sprinkle
1 cup tomatoes, seeded and diced
1 cup grated medium cheddar cheese
1 cup shredded lettuce, lightly packed
1 cup sour cream
1 cup salsa
1 cup guacamole
8-10 flour tortillas, 10", heated in covered bowl
Makes 8 to 10 fajitas
Melt margarine in frying pan.
Add onion and pepper.
Stir-fry until lightly browned.
Melt butter in saucepan.
Add turkey.
Sprinkle with salt and pepper.
Cover.
Heat, stirring as little as possible so turkey doesn't break up.
Put next 6 ingredients in separate bowls.
To prepare for eating, lay 1 tortilla on plate.
Place some onion-pepper mixture down center.
Add some turkey strips, then whatever you would like of the 6 garnishes.
Fold tortilla over mixture.
