12 ounces turkey breakfast sausage, casings removed if necessary
1 12-ounce package corn muffin mix
1 tablespoon dried chives
3/4 teaspoon pepper
1 cup reduced-fat Cheddar cheese
1 11-ounce can corn with red and green peppers, drained
2/3 cup skim milk
1/4 cup egg substitute
12 paper liners, or vegetable spray
Servings: 12
1. In large non-stick skillet, over medium-high heat, sauté turkey sausage, breaking up until no longer pink.
2. In medium bowl, combine sausage, corn muffin mix, chives, pepper, cheese and corn.
3. In small bowl, combine milk and egg substitute. Add to sausage mixture, stirring until just blended.
4. Coat 2-inch muffin tins with vegetable spray (or line with paper liners). Evenly spoon mixture into each of the 12 muffin cups.
5. Bake at 400ºF for 18 to 20 minutes or until toothpick, inserted in center of each muffin, comes out clean.
Yield: 12 Muffins
Notes: Cooking tip: To reheat from refrigerator, wrap muffin in paper towel and microwave on HIGH for 20 seconds. To reheat from freezer, wrap muffin in paper towel, microwave on HIGH for 40 seconds.
