Zucchini Casserole

2 lb fresh zucchini, peeled 1 kg
salt
1 medium-size onion 1
1 small, crisp green pepper, seeded 1
1/4 cup sugar 60 mL
1 cup heavy cream 250 mL
Ritz crackers, ground up

Preheat oven to 350°F/180°C.

Cut zucchini into 1/2 in/1 cm chunks and boil 3 to 4 minutes in salted water.

Finely chop onion and green pepper.

Drain zucchini and put into flat oven dish, adding onion, pepper and sugar. Drain off moisture again.

Add cream so that the vegetables are not quite covered. Sprinkle ground-up crackers thinly over the top.

Bake approximately 30 minutes.
