4 medium zucchini 4
1 large onion, chopped 1
1 clove garlic, minced 1
4 medium tomatoes, peeled and chopped 4
1/2 cup green pepper, chopped 75 g
6 oz cooked meat, ground or chopped 170 g
salt and pepper, to taste
4 oz bread crumbs 100 g
4 oz grated Parmesan cheese 100 g
Simmer zucchini in boiling salted water for about 12 minutes. Cut lengthwise; scoop out pulp and chop.
Combine pulp, onion, garlic, tomatoes, green pepper, oil, meat, and seasonings.
Pile mixture into zucchini halves and place on a baking sheet. Top with bread crumbs and grated cheese.
Bake in a 375°F/190°C oven for approximately 15 minutes.
