11 ounces Pastry flour
1 teaspoon Baking soda
1/2 ounce Cinnamon, ground
10 ounces Unsalted butter
8 ounces Brown sugar
1 Egg
1/2 teaspoon Salt
Egg wash, as needed
Sliced almonds, as needed
Coarse grain or granulated sugar, as needed
Yield: 10 Dozen
1. Sift together the pastry flour, baking soda and cinnamon. Set aside.

2. Cream the butter and sugar. Add the eggs and salt. Add the flour mixture, beating just until well combined. Wrap dough in plastic and chill until cool, about 2 hours.

3. Divide the dough in half. On a lightly floured surface, roll each piece into a rectangle 1/8-inch (3 millimeters) thick. Cut the dough into 1-inch × 2-inch (2 1/2 centimeter × 5 centimeter) bars. Place on paper-lined sheet pans.

4. Brush with egg wash, then sprinkle with sliced almonds and sugar.

5. Bake at 350°F (175°C) until golden brown, approximately 12 to 15 minutes.
