3 cups rolled oats, uncooked
1 1/4 cups unbleached flour
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup butter, softened
2 egg whites, whipped
1 teaspoon vanilla extract
Servings: 24
Preheat oven to 375. Prepare a 9 x 13" pan with cooking spray and flour; set aside. In a mixing bowl, combine oats, flour, sugars, baking soda, cinnamon, and salt. In another mixing bowl, combine margarine, egg whites, and vanilla. Mix dry ingredients with wet ingredients just until moistened. Spread mixture into prepared pan. Bake for 25 minutes or until lightly browned.
