Recipe Feeder
1 pound Beans, White
1 small Duck, Cut Into Pieces
8 ounce Pork
8 ounce Lamb
2 medium Onions, Diced
4 ounce Bacon, Cubed
2 tablespoon Garlic, Minced
8 ounce Pork Sausage, Spicy
4 cup Water
*** SPICES TIED IN CHEESECLOTH ***
12 Peppercorns, Black
2 stick Thyme
4 Bay Leaves
1 small Rosemary, Sprig

Soak navy beans overnight. The next day, cook the duck pieces on both sides to render some of the fat. This takes about 15 minutes total. Remove the duck. Increase heat to high and add the pork. Brown well, then remove. Brown the lamb then remove.

Preheat oven to 300f. Pour off and discard most of the fat, leaving just about 3 tb in the pot. Lower heat and add the onions. Cook, stirring, until onions soften, about 7 minutes. Add drained beans, bacon, garlic and herbs and replace the duck, pork and lamb. Add water, cover and place in the oven for 2 hours.

Add the sausages and salt as desired. Replace in the oven another hour. Remove herbs in cheesecloth. Serve the casserole on the table.
