salt pork fat, 1-in x 3-in (2.5-cm x 6-cm)
1 large onion, sliced 1
6 potatoes, cut in cubes 6
2 cups boiling water 500 mL
2 cups fresh haddock or cod 500 mL
4 cups milk 1 L
1/8 tsp freshly ground pepper 0.5 mL
salt to taste

Try out the fat, add sliced onion and cook to a light brown.

Strain the fat into a saucepan, add the potatoes and boiling water and cook for 10 minutes.

Add the fish and simmer for about 15 minutes.

Add the milk and seasoning. Heat to the boiling point but do not boil and serve.
Chef's Note

This showder can be prepared with fresh haddock or cod.
