Basic Fudge Icing

3 pounds Powdered sugar, sifted
1/4 teaspoon Salt
3 ounces Light corn syrup
4 ounces Shortening, melted
10 fluid ounces Water, hot (140°F/60°C)
1 fluid ounce Vanilla extract
Yield: 4 pounds
1. Blend the sugar, salt and corn syrup. Beat until smooth.

2. Add the melted shortening and blend well.

3. Add the hot water and vanilla and blend well. If the fudge is too stiff, it may be thinned with a simple sugar syrup. Use before the icing cools.



Notes: Variation:

Cocoa Fudge Icing -- Sift 4 ounces (120 grams) cocoa powder with the powdered sugar. Add 2 ounces (60 grams) melted unsalted butter with the shortening.
