Make ahead and refrigerate -- stays thick for at least one hour. Great as an after-dinner drink or dessert.
4 cups vanilla ice cream, softened
1/2 cup brandy
1/4 cup mint-flavored liqueur (such as Creme de Menthe)
Serves 6
Process all 3 ingredients in blender until smooth.
Makes about 5 cups.
Pour into 6 chilled small glasses.
Serving Suggestion:
Use green Creme de Menthe instead of clear for a festive Christmas treat.
Serve in parfait glasses or champagne flutes.
Just add a straw and enjoy!
