Preheat oven to 375F. Coat 2 large baking sheets with cooking spray.
2 1/4 cups whole grain pastry flour
1/4 cup cornstarch
1 tsp. baking soda
1/2 tsp. salt
4 tbsp. butter, at room temperature
2 oz. reduced fat cream cheese, at room temperature
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 large egg
1 large egg white
1 tsp. vanilla extract
3/4 cup semisweet chocolate chips
makes 40
In a medium bowl, mix the flour, cornstarch, baking soda, and salt.
Place the butter and cream cheese in a large bowl.
Using an electric mixer on medium speed, beat for 1 minute, or until smooth.
Beat in the granulated sugar and brown sugar until light and creamy.
Beat in the egg, egg white, and vanilla.
Reduce the mixer speed to low.
Add the flour mixture in 2 batches, beating just until combined.
Stir in the chocolate chips.
Drop the dough by rounded teaspoons about 1 1/2" apart onto the prepared baking sheets.
Bake 1 sheet at a time for 9 to 12 minutes, or until golden.
Cool on a rack for 2 minutes.
Remove from the sheet and place on the rack to cool completely.
