4 pound Pork, Loin, Boneless
2 teaspoon Cornstarch
¼ teaspoon Cinnamon
1 dash Salt
½ teaspoon Orange Zest
2 tablespoon Orange Juice
2 tablespoon Sherry, Dry
2 cup Cranberry Sauce
In smalll saucepan stir together all ingredients except pork. Cook, stirring over medium heat, until thickened. Place roast in shallow baking dish. Roast at 325f for 45 minutes. Spoon 1/2 cup glaze over the roast and continue baking 30-45 minutes more, until internal temperature is 155-160f. Let stand 10 minutes before slicing and serving with remaining sauce.
