6 ounces Alaska king crab meat (up to 8 ounces)
1 10-ounce package frozen chopped spinach
3 tablespoons butter or margarine
1/2 cup chopped onion
2 tablespoons flour
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
2 cups chicken broth
2 cups half and half
OR
2 cups milk
Servings: 5
1. Slice crab; reserve liquid.
2. Cook spinach according to package directions; drain. Melt butter in large saucepan. Add onion; sauté until tender. Blend in flour and spices. Gradually add chicken broth, stirring constantly; heat to boiling. Purée spinach mixture in blender or food processor. Add half-and-half, crab liquid and crab. Heat thoroughly. Do not boil.
Creamed Alaska King Crab and Spinach Soup can be served chilled.
