Ingredients

3 cups (500 mL) Cheerios® cereal, finely crushed
3/4 teaspoon (3 mL) salt
1/2 teaspoon (2 mL) pepper
1/4 cup (50 mL) milk
2 tablespoons (25 mL) honey
1 tablespoon (15 mL) mustard
1 lb. (500 g) boneless, skinless chicken breast, cut into 1-inch (2.5 cm) pieces (use drumsticks but remove skin)
2 tablespoons (25 mL) butter or margarine melted (optional)
Directions

Heat oven to 400° (200° C). Spray 13x9x2 inches (3.5 L) pan with cooking spray. Stir together cereal, salt and pepper; set aside. Stir together milk, honey and mustard in medium bowl until blended. Dip chicken into milk mixture, shake off excess; coat with cereal mixture. Place chicken in pan; drizzle with butter, if desired.

Bake 10 - 15 minutes or until crust is golden and chicken is no longer pink in centre. Serve with favorite dipping sauce.
