Preheat oven to 450F.

One 9" pie.
Prepare pastry: roll out half of dough and line a 9" pie plate.
Trim and flute edge. Do not prick.
Beat with rotary beater until smooth:
3 tbsp. pre-sifted Monarch soft wheat flour
1/2 cup granulated sugar
1 cup thick dairy sour cream
Arrange attractively in unbaked 9" pie shell:
5 cups peeled, sliced fresh peaches
Pour sour cream mixture over top.
Bake in preheated 450F oven for 15 minutes, then reduce heat to 350F for an additional 35 to 40 minutes, or until the fruit is tender and filling set.
Sprinkle over hot pie:
1/4 cup lightly packed brown sugar
Broil for 2 to 3 minutes, or until sugar is melted.
Serve warm.
