Blue cheese sneaks into this salad for a nice sharp flavor. Dressing is a malty-creamy color.
1 medium head of iceberg lettuce, cut or torn
2 small zucchini with peel, sliced thinly
2 oranges, peeled, sectioned and cut into 3 pieces each
1 grapefruit, peeled, sectioned and cut into 4 pieces each
2 cups tiny cauliflower florets
1/2 cup crumbled blue cheese
Sour Cream Dressing:
1 cup sour cream
2 tbsp. balsamic vinegar
Serves 8 to 10
Combine all 6 ingredients in large bowl.
Cover and chill until needed.
Sour Cream Dressing:
Mix sour cream with balsamic vinegar.
Pour over salad and toss or serve on the side.
