Ingredients:

vegetable or olive oil
8 finely chopped shallots
2 Tbsps crunchy peanut butter
1 Tbsp brown sugar
2 Tbsps soy sauce
1 small pineapple, cut into cubes* or 4 rings from a can
1 lime
1 red chili pepper (or whatever is in season and available--which can lead to interesting results)
1 oz. cilantro leaf


Instructions:

Heat the oil in a frying pan and fry the shallots until they are brown. Reduce the heat and add the peanut butter, soy sauce, and sugar until the sugar has melted. The mixture should be sweet and salty, so you may add salt to your own taste. All this to cool off. Arrange the pineapple cubes on a plate and put a heaped tsp. of the peanut butter mixture on top. Top with a squeeze of lime, a piece of chili and cilantro.
