1/2 to 1 lb. asian eggplants, sliced into rounds
1 lb. whole pork tenderloin, sliced into bite-sized pieces
1/2 cup frozen peas
hand full of fresh basil leaves
Add one tablespoon sesame oil to a wok or frypan. Saute eggplants until they begin to soften. Add pork and continue cookings until pork is done, about 5 minutes. Add 1 12.3 oz. package of CurrySimple Green Curry. Add the peas and the basil leaves and simmer until all ingredients are heated.
Serve with jasmine rice and fresh bean sprouts…
