8 lbs green tomatoes 3.5 kg
4 large onions 4
5 green peppers 5
4 red peppers 4
1 cup pickling salt 250 mL
4 cups vinegar 1 L
4 cups sugar 1 L
1 tsp cloves 5 mL
1 tsp cinnamon 5 mL
1 tbsp tumeric 15 mL

Slice tomatoes, peppers and onions. Cover with salt, stir well and let stand for at least 8 hours, or overnight.

Rinse thoroughly. Drain well. Put vegetables in a large kettle. Add vinegar, sugar and spices. Bring mixture to a boil, then simmer, uncovered, for about 30 minutes, stirring frequently until slightly thickened. Pour into hot sterilized jars and seal. Store in a cool place.
