Honeydew Granita

Processing it twice gives this granita a smooth texture. Superb!

1 1/2 cups water
2/3 cup granulated sugar
3 cups chopped honeydew
1 tbsp. lemon juice
Serves 4
Heat and stir water and sugar in medium saucepan on medium until sugar is dissolved.
Increase heat to high.
Bring to a boil.
Boil, uncovered, for 3 minutes.
Remove from heat.
Cool.
Process sugar mixture, honeydew and lemon juice in blender until smooth.
Pour into 2 quart shallow baking dish.
Cover.
Freeze for about 4 hours until almost firm.
Scrape mixture, using fork, into blender.
Process until smooth.
Makes about 5 cups.
Pour into 4 chilled medium glasses.

Variation (with alcohol):
Drizzle each with 2 to 3 tbsp. melon-flavored liqueur (such as Bols).
