10 bacon slices
1 pint corn oil
1/2 ounce fresh basil, chopped
1/2 ounce fresh chives, sliced
1/4 ounce fresh marjoram, chopped
8 fluid ounces pear vinegar
1 teaspoon kosher salt
1 tablespoon black pepper

1. Dice the bacon. In a heavy saucepan, combine the bacon and the corn oil and cook until the bacon is crisp. Allow the bacon and oil to cool.
2. Whisk the herbs into the oil. Whisk in the pear vinegar and season with salt and pepper.
