Hot Milk Sponge Cake

Preheat oven to 350F
Grease two 9" round layer cake pans and line with waxed paper.
1 cup hot scalded milk
1/4 cup butter
2 1/3 cups pre-sifted Monarch soft wheat flour
2 1/2 tsp. baking powder
1/2 tsp. salt
4 eggs
1 1/2 cups granulated sugar
1/2 tsp. orange flavoring

Combine milk and butter.
Sift together flour, baking powder and salt.
Beat until light and fluffy, eggs.
Gradually beat in sugar and orange flavoring.
With mixer at high speed, beat for 1 to 2 minutes.
Stir in the dry ingredients and then milk mixture.
Turn into prepared pans.
Bake for 30 to 35 minutes.
Cool in pans.
When cool, loosen edges and remove.
