8 lamb rib chops, cut 1-in/2-cm thick 8
2/3 cup salad oil 150 mL
1/3 cup lemon juice 75 mL
1 medium-sized onion, chopped 1
1 tsp salt 5 mL
1 tsp oregano 5 mL
dash pepper
parsley sprigs
lemon slices
onion slices

Marinate lamb rib chops in salad oil, lemon juice, onion, salt, oregano, and pepper at least 4 hours. Drain chops. Grill over hot coals about 6 minutes on each side. Baste with marinade. Garnish with parsley, lemon and onion slices.
Chef's Note

Serve with baked potatoes and cooked asparagus.
