1/3 cup olive oil 75 mL
1 large onion, thinly sliced 1
1 clove garlic 1 clove
1 tbsp finely chopped parsley 15 mL
1 tsp salt 5 mL
1/2 tsp black pepper 2 mL
1/8 tsp powdered saffron 0.5 mL
2-1/2 lb cut up chicken 1 kg
1/2 lemon, cut in 4 wedges 1/2
1/3 cup green olives 75 mL
Heat oil in Dutch oven or electric frying pan. Stir in next six ingredients.
Add chicken pieces and turn to coat with onion mixture. Arrange lemon pieces over top.
Cover and simmer 1-1/2 to 2 hours or until very tender.
Add olives and serve with noodles.
