1 tablespoon Ginger, grated
2 ounces Concentrated orange juice
14 ounces Mango, cubed
2 tablespoons Sucralose
pinch Citric acid (optional), *see Note
Yield: 14 ounces
1. Boil the grated ginger and concentrated orange juice in a non-reactive pan. Remove from the heat, cover and let sit for 10 minutes. Add the remaining ingredients. Bring the mixture to a boil, stirring constantly. Cook for three to five minutes until the mixture thickens.

2. Remove from heat and let cool.

Notes: *Citric acid -- acid found in citrus fruit juice, used to enhance flavor in foods and to prevent crystallization of sugar syrups. Available in liquid or powdered form.
