Apple and vanilla flavors with the sweetness of maple syrup.

4 cups apple cider (or apple juice)
3 tbsp. maple (or maple-flavored) syrup
1 vanilla bean, split
1 cinnamon stick (4")
10 whole allspice
1/3 cup brandy (2 1/2oz), optional
Serves 4
Combine first 5 ingredients in medium saucepan.
Bring to a boil on medium
Reduce heat to medium-low.
Simmer, uncovered, for about 25 minutes until fragrant.
Remove from heat.
Strain through sieve into 4 cup liquid measure.
Discard solids.
Add brandy.
Stir.
Makes about 3 1/3 cups.
Pour into 4 small mugs.

Serving suggestion:
Add a fresh cinnamon stick for garnish, or serve with maple-flavored chocolates.
