3 cups Granny Smith apples, cored, peeled and chopped
1 cup sugar
2 cups flour
1 teaspoon ground cinnamon
2 teaspoons baking soda
1 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon ground mace
2 eggs
1/2 cup cottonseed oil or canola oil
2 teaspoons vanilla extract
2 teaspoons freshly squeezed lemon juice
1 cup raisins
1 cup chopped walnuts

Preheat oven to 350-F degrees F. Grease pan for large-size muffins.

In a large bowl, combine apples and sugar and toss to coat apples. Set aside. In a large mixing bowl, combine flour, cinnamon, baking soda, nutmeg, salt and mace. Set aside.

In small mixing bowl, combine eggs, oil, vanilla and lemon juice and whisk until smooth and combined. Pour egg mixture into sugared apples and mix. Add flour mixture and stir until batter is just combined. Batter will be stiff. Stir in raisins and walnuts. Portion batter into prepared muffin pan.

Bake 20 to 25 minutes or until toothpick inserted into center of muffin is removed clean.

Makes 1 dozen large muffins.
