Cake:
1/2 cup sugar
2 1/2 cups Bisquick Mix
Mix together:
1 egg
2 tsp. grated orange peel
1/2 cup orange juice
1/4 cup water
1 cup finely shredded carrot
Add to dry ingredients and mix with a wooden spoon a few minutes. Pour into buttered 8x9" cake pan or bundt pan. Bake at 350F for 30-35 minutes.
Topping:
1 tbsp. butter
1/4 cup brown sugar
1/2 cup flaked coconut
1 tbsp. milk
Spread over top of cooked cake. Place under broiler until brown and bubbly. Serve warm.
