1/2 pound green beans, cut into 2-inch lengths, steamed
2 large potatoes, cooked until just soft, peeled, cubed
2 scallions, sliced
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 large clove garlic, crushed
1 small red onion, thinly sliced into rings
1/2 teaspoon oregano
1/2 teaspoon salt
1/8 teaspoon pepper
Combine beans, potatoes, and scallions. In a separate bowl, combine remaining ingredients and pour over salad.
