Nice spicy flavor but not strong. This will be a winner.
1/2 cup cooking oil
1 cup granulated sugar
2 large eggs
2/3 cup stewed, pitted and chopped prunes, drained, juice reserved
1 1/2 cups all purpose flour
1/2 tsp. bakig powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
2/3 cup sour milk (or 2 tsp. white vinegar plus milk, stand 5 minutes)
Prune Icing:
3 cups icing (confectoners) sugar
6 tbsp. butter or hard margarine, softened
1/4 cup reserved prune juice
1/2 tsp. vanilla
Makes 1 cake
Beat cooking oil, sugar and 1 egg together in large bowl.
Beat in second egg.
Add prunes and stir with spoon.
Stir next 7 ingredients in separate bowl.
Add flour mixture in 3 parts alternately with sour milk in 2 parts beginning and ending with flour.
Divide between 2 greased 8" round layer pans.
Bake in 350F oven for about 25 minutes.
An inserted wooden pick should come out clean.
Cool.
Remove from pans.
Prune Icing:
Beat all ingredients in medim bowl on low to moisten.
Beat on medium, adding more juice or icing sugar if needed to make proper spreading consistency.
Makes about 1 1/2 cups, enough to fill and ice Prune Cake.
