1 lg sweet potato -- peeled and cut into 1/4-inch slices
coarse-grained salt
cracked black pepper
1 lg apple -- peeled, cored, and cut into 1/2-inch slices
1/2 sm onion -- thinly sliced
PREHEAT oven to 400° F. In an 8 X 8-inch nonreactive baking dish, place a single layer of sweet potatoes. Season with salt and pepper to taste. Place a single layer of apples over sweet potatoes and sprinkle with salt and pepper. Add a layer of onions and continue layering ingredients, ending with a layer of sweet potatoes. Be sure to season each potato layer with salt and pepper. Place a piece of parchment paper directly over top layer. Cover dish tightly with aluminum foil and bake 60 to 70 minutes, or until sweet potatoes are fork-tender and cooked through. In summer, do it Rainy's way, foil-wrapped on the grill.
*grill don't have to cook this dish at 400° F. If you've got something else in the oven throw these in, too. They'll cook to perfect doneness sooner or later. Just check them every 15 minutes or so.
