4 cups diced rhubarb
1 cup sugar
1 package strawberry flavored gelatin (3 oz)
1 1/2 cups flour
1/2 teaspoon salt
1/2 cup butter
1 cup sugar
2 teaspoons baking powder
1 egg, beaten
3/4 cup milk
1 teaspoon vanilla
2 teaspoons cinnamon
2 tablespoons sugar

1. Combine rhubarb with sugar and gelatin and set aside.
2. Mix flour, baking powder and salt in bowl and set aside.
3. Cream butter and sugar in large mixing bowl; beat in egg. Add dry ingredients alternately with milk and vanilla. Blend until smooth.
4. Grease a deep-dish pie plate with margarine or butter. Spread rhubarb mixture on bottom and batter over rhubarb. Top with 2 teaspoons cinnamon mixed with 2 tablespoons sugar. Bake at 350 for 40 minutes.
