30 crepes (this includes 5 extra) - cut in quarters
120 pc quail eggs
120 croutons - ~2in in diameter
mushrooms - sliced
red onion - sliced thin

two mustard vinaigrette
=Poach quail eggs. Make nice crispy croutons. Form chevre into balls, make indentation to insert poached quail egg. Lay combination on crouton, top with sliced mushroom, cover with feuille brick. Roast until light brown. Serve with mache/baby spinach combo, sliced red onion and confit tomato.
