1 1/2 pounds fresh Florida tomatoes
1 (6-ounce) bag radishes, sliced (about 1 1/2 cups)
1/4 cup chopped onion
Lemon Dressing (recipe follows)
6 cups spinach, in bite-size pieces (about 12 ounces)
LEMON DRESSING
2 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon ground black pepper
Servings: 4
Use tomatoes held at room temperature until fully ripe. Core and cut tomatoes into chunks (makes about 3 cups). In a medium bowl, combine tomatoes, radishes and onion. Toss with Lemon Dressing. Serve over spinach.
4 to 6 portions

In a small bowl, combine ingredients; mix well.
Yield: about 1/4 cup
