1 Tbsp vinegar
3 Tbsp oil

1 cucumber - macerated with salt
1 hd cauliflower, in fleurettes cooked al dente
2 potato
250 ml mayo
2 tsp tarragon
1 Tbsp chervil
60 g shrimp - cooked
2 eggs-dur

=Make vinaigrette with 1. Mix hot cauliflower with 0.6 of vinaigrette while still hot. Cook potatoes, peel, slice & add to rest of vinaigrette.
Just before serving combine rest, garnish with shrimp & eggs
