1 small garlic clove, crushed
1/2 teaspoon cumin seed, toasted
1/2 teaspoon paprika
1 pinch cayenne pepper
2 fluid ounces olive oil
1 tablespoon balsamic vinegar
2 tablespoons boiling water
Servings: 16
1. Place crushed garlic and spices in a grinder.

2. Blend to form a smooth paste.

3. Put in a bowl, and very gradually whisk in the oil.

4. Then whisk in the vinegar.

5. Finally whisk in the water to form a thin pouring sauce.

6. Cover and set aside.



Serving Ideas: Serve with King Prawns with Four Dips.
