1 pound Snapper, Fillets
1½ cup Croutons
½ teaspoon Mustard, Dry
½ teaspoon Salt
¼ teaspoon Cayenne
1 dash Pepper
1 Egg
1 tablespoon Water
3 tablespoon Butter, Melted

Heat oven to 500f. Grease rectangular pan. If fillets are large, cut into pieces. Mix crushed garlic croutons, mustard, salt, cayenne and pepper. Beat egg and water until well blended. Dip fish into egg, then coat with crouton mixture. Place fish in pan. Drizzle butter over fish. Bake uncovered about 10 minutes or until fish flakes easily with fork.

To grill: grease wire grill. Place fish fillets on grill. Grill 4 inches from medium coals 12 minutes, turning fish once and brushing with butter, until fish flakes easily with fork.
