Left over tator tots - break them up in what ever size chunks you want
minced onion ( i just put a little, not to over run it)
cut up canadian bacon (you can do ham, bacon) (hint I use those real bacon bits all the time in things, great sub for the real strips)
Olive oil
mix all this together...
olive oil in pan and start stirring (you could just leave it an brown on both sides, but i like the crispy all in it)
when done the way you like it I served it on a plate with two runny (sunny side up eggs) and toast..
