Tomato Bean Dish

The red and green colors make this particularly festive. Best made the day of serving.

6 cups frozen green beans, cooked and drained
6 medium tomatoes, chopped
2 cups grated medium or sharp cheddar cheese

Topping:
4 large eggs
1 cup milk
1 cup biscuit mix
1 tsp. salt
1/2 tsp. cayenne pepper
1 tsp. sweet basil
Serves 10 to 12
Spread green beans in layer in ungreased 9 x 13" pan.
Layer tomatoes over top.
Sprinkle with cheese.
Beat eggs in mixing bowl.
Add milk, biscuit mix, salt, cayenne and basil.
Beat.
Pour over cheese.
Bake, uncovered, in 350F oven for about 50 minutes until browned and heated through.
