3/4 cup all-purpose flour
1/4 cup whole wheat flour
1 cup low-fat milk
1/4 teaspoon salt
2 eggs

To achieve the proper airy texture, whole eggs need to be used here. However, you can forgo butter and spread the popover with all-fruit jam and still remain within your own healthy eating guidelines.


Heat oven to 450 degrees. Spray six 6-ounce custard cups or 6-cup popover pan with nonstick cooking spray. Mix all ingredients with hand beater just until smooth (do not overbeat). Fill cups about 1/2 full. Bake 20 minutes. Reduce oven temperature to 350 degrees. Bake 20 minutes longer. Immediately remove from cups. Serve hot. 6 popovers
