Recipe Feeder
2 or 3 cups fresh baby spinach
1 torn up leaf of red cabbage for color (optional)
3-4 strips bacon, cooked & crumbled (save the bacon grease for the dressing)
sprinkle of roasted soy nuts (I go big on these "sprinkles")
sprinkle of pine nuts
sprinkle of crumbled goat cheese, if desired
coupla twists of fresh ground pepper after salad is dressed

The dressing recipe goes like this:

1 beaten egg
3 tbsp. red wine vinegar
2 packets Truvia
dash of salt
1/3 cup hot bacon grease

Combine the beaten egg, vinegar, truvia & salt. Pour the hot grease slowly into the egg mixture while continuing to stir briskly. It should emulsify - come together like a mayonnaise, slightly thickened. This way it coats the greens & doesn't pool in the bottom of the bowl.
