1/2 cup Avocado
1/2 cup Tomato -- peeled
1/2 cup Red Onion -- boiled & diced
1/4 cup Jalapeno Pepper
1/4 cup Bell Pepper
1/4 cup Parsley -- chopped
1/8 tbs. Sugar
salt

Chop each vegetable by hand or with food processor. Mix together in a non-aluminum bowl. Add the sugar and salt to taste. Adjust the seasonings if necessary. Let the salsa sit for at least 1 hr. Stir well before serving. Yield: Approx. 2 cups
