Banana Bread And Butter Pudding

Heat oven to 350F
Butter a 1 1/2 qt. casserole with the 1 tbsp. butter.
Put a pan of hot water, large enough to hold the casserole, in the oven.
1 tbsp. butter
6 slices day-old bread
3 tbsp. soft butter
3 tbsp. sugar
1/2 tsp. cinnamon
2 ripe bananas
4 eggs.
1 tall can evaporated milk (1 7/8 cups)
1/2 cup sugar
1 tsp. vanilla
3 tbsp. brown sugar
Serves 6
Cut the crusts from the bread and butter one side of each slice, using the 3 tbsp. butter.
Cut each slice into 1/2" squares.
Put half of these bread pieces in prepared casserole.
Combine 3 tbsp. sugar and cinnamon and sprinkle half of the mixture over the bread cubes.
Slice 1 banana into casserole.
Top with remaining bread pieces, cinnamon-sugar mixture and slice remaining banana over.
Beat eggs, milk, 1/2 cup sugar and vanilla together to blend and pour over layers in casserole.
Set in pan of hot water in oven and bake 45 minutes.
Sprinkle top with brown sugar and continue baking about 15 minutes or until a knife inserted near center comes out clean.
Cool about 30 minutes and serve warm.
