Cake
Preheat oven 350
2 cups flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1 cup white sugar
1/2 cup water
1 cup mashed 'ripened' bananas (about 3)
1 pinch salt
1 cup mayonnaise
In separate bowl sift together dry ingredients
In large mixing bowl beat sugar, water bananas salt and mayo. slowly add sifted flour mix.
To prepare pans- use 3 8inch rounds. butter and flour insides, then line each pan with parchment paper rounds to fit bottoms. Butter and flour the parchment paper (seems redundant but it really did lift out nicely) Bake(now this is where Marylou recipe seemed to be an error as she says 45 min bake.. but I baked mine 22-28 min before they sprang back when touched- I suggest you use your own judgment) cool
Buttercream Icing
1 1/2 pks of cream cheese, softened...(12 oz)
3 sticks softened butter
6 cups of confectioners sugar
3 tsp vanilla
(Can add 3/4 cup of chopped nuts to frosting or to sides of frosted cake.
I found a cake frosting hint that using an old plastic lid snipped with pinking shears as a design tool used about the sides of a cake to give a smooth line etched design to the sides of a frosted cake. I skipped the nuts and used this method- came out nice.
