8 6-inch flour tortillas
1 teaspoon vegetable oil
1 pound sirloin flank or round steak, cut into thin strips
1 cup slivered green or red peppers
1 medium onion, thinly sliced
3/4 cup salsa
1/2 teaspoon cumin
ASSORTED TOPPINGS:
sour cream
guacamole
salsa
cheddar cheese
1. Wrap tortillas in foil and place in large non-stick skillet over medium heat for 5 minutes, turning once. Remove from skillet and turn heat to high.
2. Add oil. Add beef; cook and stir about 2 minutes. Add peppers and onion; cook, stir 3 minutes longer or until tender. Stir in salsa and cumin and heat through.
3. Fill tortillas with beef mixture; sprinkle with desired toppings and serve immediately.
