2 tablespoon Olive Oil
2 cup Onion, Chopped
2 Garlic Cloves, Minced
1¾ pound Tomatoes
3 tablespoon Tomato Paste
1 Bay Leaf
4 cup Water
1 cup White Wine, Dry
8 ounce Clam Juice
8 ounce Shrimp
2 Catfish, Fillets
In large soup pot, heat oil. Saute onion and garlic until unions are transparent. Add tomatoes, tomato paste and bay leaf. Cover and simmer 25 mins. Add water, wine and claim juice. Simmer uncovered 45 mins. Add shrimp, catfish, cubed, salt and pepper. Cook 10 mins or until catfish flakes easily. Remove bay leaf. Garnish each serving with chopped coriander and lemon slices.
